Baked salmon is AWESOME. I have some leftovers in the fridge that I think I'll actually even eat as part of breakfast tomorrow.

Of course, being the Vietnamese thing to do, I eat it with rice. Still good, no matter how you eat it.

You actually bring up a GREAT point. Remember, salmon is much different than most other seafood. Usually seafood is done, or it is not. Salmon, you can cook like beef, how you like it. You can cook salmon "medium rare." Usually people think you can only do it "well" done, but I kid you not, try it medium or medium well

Ok, here'* a twist, I just decided to open it for the first time to smell that excellent salmon smell when I noticed it was smoked
That changes things up a bit, hehe
