Took me a minute but ya,

They paid $27 and the receptionist kept $2.

$27-2 is $25 for the room.

To get to $27, they subtracted $3 from all of them since they couldn't subtract $5.

You can't just add the $2 to what they paid to get the total. You would have to add the $3 back.
