I have a quick question. Does anything about your employment history comes up in a background? Also, how often do managers actually call your past employer'* for a reference?

I always assume an employer would check out past employers. I don't really know how many do. It depends on the employer. But if you don't want them to find out about something, I'd leave that particular employer off your resume unless you absolutely need it.
As far as background checks, like info you can find online through different sources, I don't think you can find employment history...only addresses, names, etc. IIRC.

A background check is a criminal check usually done at the local city or Sherrif'* office. What will usually show up is your arrest record, not your convictions, so you may have some explaining to do.
When calling your former employer, afaik, all that can legaly be dicussed is your wage, length of employment, first/last day worked, and if they would hire you again.
Now that last question can be a killer if they respond with a no.
