I couldn't actually see which specific cylinders had more or less coolant in them, but I drained the front bank first (1-3-5) and then the rear bank (2-4-6), and tried cranking in-between, and it felt like it was "halfway better". Once all the cylinders were cleared, it started up again after a little persuasion with the throttle.

Yep, I replaced the UIM, UIM gasket, and the LIM gasket (underneath the LIM). We scrubbed all the surfaces and everything was clean/no cracks. I also looked at my old UIM, and it even looks good. I couldn't find any cracks or anything. What do they normally look like when they're the problem?

Yep, I'm pretty sure it'* using up the coolant. We've had to keep adding to it.

Another question, could the problem really be the head gasket, even though the compression seems fine? Does that ever happen?

If you take the heads off again maybe you could put up a pic so we can have a look-see. That might give someone a clue.
I'm very interested in this as I am putting my engine together and I want to know what to avoid. One less bonneville on the road woul be a crime.
