Sounds a lot more like the 94/95 slow PCM Death...
When the car dies do the gages like the Tach and speedo drop dead, still rolling along with all of the lights on the dash lit but the Speedo is at 0?
My guess will be, Crank sensor, ICM ( Ignition Control Module ) or the PCM
And checking the cables is a good no cost first step like stated above

Welp, I cant complain really how it went today. They traced it back to the ICM, was going bad. GM dealer wanted 320 for the module, but the tech somehow knew the parts manager and got it for 120 bucks. Plus 2 hours to install (Got labor even lower to $40/hour)
Now with the thermostat, this has me wondering. Told them i wanted them to replace it cause i think its stuck open. Turns out there is NO thermostat in there. So now im wondering if this is for a reason and when the summer hits in the desert, its gonna be overheating. Well see, im just ready for MPG
..... But for $250 bucks today with labor and all, im happy

Good to hear its fixed.
On your T-stat question. There should be no problem running a t-stat in summer, yes, even here. If you do have an overheating issue, it is not because you have a t-stat in the car. We will want to make sure your cooling fans are operating correctly and you need to continue to moniter your temps to make sure the coolant temp sensor is up to speed.
