Looks like a good start. I would worry about having problems with the throttle body, like you said ZZP'* Stage 2 L36 TB looks very similar and I have seen many do this kind of stuff to N/A, Turbo, and */C throttle bodies.
I would be concerned. From a point of how the custom chip is burned etc in the meantime of the system learning and the possible extra air at high rpms leaning the motor too much etc.
There are possible issue, not definate.

The L27 seemed to benefit from the removal of half the MAF support, but the Series 1 L67 didn't. In that regard, the L36 might have a shot.
Anyone have before pics of a 99-03 TB? Why don't those runniing the INTENSE PCM on the 97 and 98 L67 switch to this style with the 99 MAF tables?

Some more progress with the polishing.
I noticed that where the MAF came through the top of the TB, there was a some what abrupt transition:

So I filled that up with some more epoxy to make it a bit smoother.
Everywhere except for that is polished. Once it cures I just have to smooth that out and polish it as much as I can.
Heres the pics:

Even started polishing the outside:

Almost there..

Mike, I'm really impressed with how good you got that to look. I hope you get a solid indication of its effects on the car throughout the powerband. The epoxy worked perfectly for filling in all those holes, it seems.
