Put "2002 SE, Stock" in your signature. It'll help.

Go with a 180° thermostat to start with, then do intake and exhaust. From there you can go with rockers, cam, or anything else that suits your fancy. Alot of information in Techinfo.

Don't forget the fiber gasket for the water outlet, and the rubber seal for the lip of the stat.

00+ T-stats dont use gaskets. Do be sure to get the rubber ring seal though.

autozone didn't have my gasket, however mine were in perfect condition [must have been replaced I guess]. So you may not need one, but get one anyways if they have it.. and a nice tube of silicone [black, red, and blue if you want to be prepared for it all ].
