Try Elk. It'* got more flavor than buff, and about the same as Beefalo. But it'* got half the fat.

This is unique, as the fat is usually the indicator of flavor.

There'* a Buff, ranch by my cabin in Vanderbilt, MI and every year the owner has a BBQ. The best stuff i ever had.
