I compared the beam of light with my mom'* car, and her'* is lower then mine which is normal. My high beams and low beams are all higher then her low beams and high beams.
There are just the two bolts on each side to remove and then you pull the headlamp out, the bulb socket is on the back you twist and pull it out.
Would it make sense that the bulb socket is in upside down which is causing the light to reflect upwards rather then downwards?

Usually the wires coming out of the plasic holder point down... how are yours pointing now?? It could be that you didn't turn the plastic piece back in all of the way...

In order for the light to be projected off-angle, the reflector assembly has to be misaligned, not the bulb. This means you re-installed the headlights wrong.
I know that when I installed my HIDs, one of the headlamps was misaligned, and it was much more noticeable that I had more intense light.
I had to readjust the headlamp down by using the adjuster star screws. One is for horizontal, and one is for vertical.
I'm not completely familiar with the Grand Prix 9007 setup though.
