Maybe you have too much coolant and not enough water?
I was using that new prestone with the clear look inside until you poor it out and its green. its for the Dex-Cool radiators. I dont remember what it said on the cover but i was thinking it was already mixed.

160 highway, about 185 in traffic.
x2.........with a 160 stat and INTENSE PCM.

Computer has fans on all the time and they always stay running a few minutes after the engine is turned off

Well, my bonne has two fans that automatically turn on when the car does...don't know if that'* standard, but...

My car runs about 150-170 usually.

That'* about right on for mine. On the highway, I'm around 180 on a cool night, and closer to 190-195 on a warm day. In the city, or idling, it goes to 220 on a warm day. The hottest days haven't even arrived yet.

Using the stock thermostat that was in the car when I bought it.

I plan to switch it with a new 180. How much does it cost to have the pcm reprogrammed for the fans to kick on at 180?

Mine runs about 185ish most of the time
It'll hit 210 if I do a lot of idling in the city

180ish. The fans do a good job of keeping it low.

Mine ran like 210 ish before I got my new thermostat. Contrary to what everyone said, when I replaced it I got the 195 T-Stat again. Now I run 190 ish on the gauge. But when I sit idling for awhile, then it creeps up to about 225 to 230. Then the fans kick in and it drops a bit.
