I emailed my professor. This was his response:

Thank you for the information. I did not make it clear that I was talking about fast response knock sensors (e.g., pressure sensors and gasket sensors). The cheap knock sensors that you mentioned are usually mounted on the engine block to detect sound or frequency. They are not fast enough to do truly real-time control; to control in one-cycle time. From my discussion with auto industry, they are looking for fast response knock sensors (quite expensive currently) to really push the engine to the limit (i.e. further increase the compression ratio).

He told us in class yesterday that the mass produced knock sensors are a condenser microphone. Inside the knock sensor is a piezoelectric element. The element in the sensor is tuned to the engine knock frequency.
