Splash shields are on the outside if there.. to protect the tank from rocks and road debris.

Our cars 87-99 100% sure.. unknown on 00+'* do not have any shielding.

There are baffles inside the tank to keep fuel from sloshing around too much. Then there is a strainer sock on the end of the pump to pick up the fuel.

Sounds a lot like your strainer could be dirty or the Pump is getting weak... Have you checked the pressure?
well i dont think that would be the problem cuz its find all the way from full down to 3gals left... so i think either the gas is realy moveing around or the Pick-up is not all the way down...

Sometimes if my tank is empty and I turn right (or left? can't remember) the car start to stall. I hate that...

I have quite owned a few GM products with the fuel pump in the tank and the earlier ones all seem to chug and stall when you brake hard, accelerate fast or take a corner to quick. Only one would completely stall out though... a 90 LaSabre. The fuel pump finally gave out and I couldnt believe the debris in it.
