There any good products out there to protect carpets from stains and such?

I use Resolve Triple Action stain remover. Pretty good stuff.

There is also a spray Scotch Guard product for fabrics and carpets. I've never used it but I hear it works pretty well. This obviously is not a cleaner, but is supposed to prevent stains by making clean up easier

25/75 mix of simple green [25% simple green]. Cleaned out the 5+ year stains in mine.

Greased Lightning takes up all my stains... But I've never actually heard of anything to prevent stains...

Works great on couches. Probably would work great in the car.

last July (03) I steam cleaned and shampoed the carpets in my Bonneville, came out really nicely with just Hoover Carpet Shampo, used very heavily ofcourse.
Once i was done, i used some Scotch Gaurd and sprayed all the carpets. I put down all the windows and parked it in the garage overnight, as it says on the back of the can to let it dry for a day or so.
Works well!
