IMO 8" is overkill, especially in the door panels. There'* not much air in there for the woofer, you'd have to do some SERIOUS reinforcing, and i don't think your bass would go up without serious amplification.
Also, there aren't really any full range 8" speakers.

8 inch isn't overkill at all. I have heard of several vehicles that have them.
I can't say why the postor is doing it, but one reason for it is to get a better soundstage in the front. It will make it more lifelike.

Some people like the idea of a single 8" woofer up front to compliment a full size in the back. It'll help "bring up" the bass to the soundstage. Optimallty an 8" would be more useful in a 3 way system, a tweeter, a 4" or so, and the woofer.
If there were a woofer of that size by a reputable manufacturer, i'd say go for it, I have B&W'* in my living room, with a 7" kevlar driver, and they stomped the next speaker down in damn near every way.
You would most certainly want a driver in between the midbass and tweeter.

For my tastes though the 6.5 and a tweet make good sense, for my taste, an installer told me once that if you can turn your head half way around and hear the rear fill then the real fill is too loud. That'* sort of the theory I tend to stick with and I have always been satisfied with the sound.

I have the kenwood excelon 6.5" components in my doors and they sound great. they bolt right up useing the hardware it gives you. no drilling. but i did have to cut the tweeter hole out about 1/16 all the way around to get the mounts to fit. real easy to do. i used the same wire harness that the bose were useing and put the crossovers in the door. took me about an hour to complete.
