I go to cruchfield and put in my car and get

Car Receivers
We're sorry, but these items do not fit your car.

is there a stereo with a aux in jack that fits my bonne without hacking on her?
without losing my chimes?
and that I can put my steering wheels controls to use?

does the chime really mean that much to you? you can wire in a chime yourself or pay someoen to do that for you for like $30 bucks.

any HU will work fine in your car.
you can keep the steering wheel remote controls you have to buy a pac steering wheel adapter. $70 bucks

before you go and buy something talk to someone who knows about CA in person and not just some sclup who has a sub in their trunk. and crutchfield is the biggest rip off out there. period. to compare prices try woofersetc.com for instance pick a product and compare the prices at least 1/2 price.
