What is the benefit of running a 180 degree thermostat rather then the 195 degree stock one?

It'* a mater of opinion. It is a 15* difference. Slightly cooler air is denser and can help lower KR a degree or so. Every little bit helps when it comes to KR reduction.

Uh Dan.. thermostat in the car is for water, right? =0)

It helps keep the engine running cooler which can reduce knock in the supercharged motors better when pulley changes etc have been done.
