So how much do you guys think it would cost to have the drivers side headlight, fender, and bumper cover replaced? And could i do it myself?

i would say, including paint and labor your looking at 5-800+ at the very minimum

With paint my guess is 1,500 -1,800.

Unless you've had practice painting other cars, I would say that you wouldn't be happy doing it yourself. For starters, you'd need a good compressor and spray gun. Painting is an art and the people who do it well are artists, IMO.

Before you remove the fender, make note of the arrangement of the alignment shims with their sequence and thickness.
