Default Yet another temp/fan question

The more I read the forum, the more I see bonne'* that have high temp issues. My question is more about the fans then anything else. My car used to run between the 200 degree mark and the next mark after. As soon as it hit the next mark, the fans would pull it back down to 200. It recently starting creeping a little higher. I flushed the system, new anti-freeze and new 180 thermostat. If the climate control is set to auto and the air is on the car runs right at 180 to 185. If I set it to economy, it creeps up to just above the mark after 200. I don't think the fans are kicking in at this point. I know the fans are running with the a/c on like they are supposed to, but it would appear that they are not running properly with the a/c off. Any ideas on how to check and correct the problem or shall I just run with the a/c on all of the time?

with the AC off the low speed fan relay kicks the fans on at 212 and the high speed relay at 226 degrees I believe. So if your car isn't getting that hot it won't kick em on.
