What little things will I likely need to replace all four struts? Certain bolts, upper strut bearings...

Most times, I didn't have to replace anything else. I once regretted not changing the top bearing when I had to tear it apart a few months later...especially as they aren't very expensive. You may want to check the condition of the rear strut mounts. Sometimes the plastic shield starts to go on those. I had one on the '91 GP fail altogether where it pushed the rod right through it.

I paid to have my fronts done, and had them do the upper bearings.

I did my rears myself, and paid to have an alignment afterwards. The upper rubber mount was in good condition for both of mine. I just cleaned them and re-installed them. My rear struts came with everything I needed in the box.

Had I not wanted an alignment, I would have carefully marked the hub bolts before I removed them. You might want to try this. Also make sure you set your ELC height afterwards. Mine was high when I finished due to slight differences in the struts. Had to adjust my sensor.
