Almost Stalls After Starting

my car ran a little better when i unplugged the coolant temp sensor, but not enough to where it was perfect, so i plugged it back in and unplugged the MAF sensor and now the think runs like a champ. No idle problems at all.. After it warms up it falls to 800 rpm and holds steady. Still falls on its face at WOT though..

Thanks for all of the advice.
To answer the first question, when coasting down hills or driving with no throttle input, it is fine. The only time it acts like it wants to stall is immediately after starting. It gets fairly rough and I was hoping that it running rough like that immediately after starting would not cause other problems. It kind of shakes the car and sounds bad when it is almost stalling.
My coolant guage inside of the car seems to be pretty accurate. It always starts out at the bottom of the gauge, and then when running goes up to around 200 degrees F. Is the temperature sensor the feeds information to the PCM the same as the one that feeds information to my guage? If I were to replace the temperature sensor, where would I find it? Also, in the last most reply about unplugging the MAF, is that something that is easy/cheap to replace?

Im not sure on the 3800, but on my L98 Trans Am and my 79 Catalina, both with gauges for the temp they use a sepreate sensor for the Temp and PCM. (Beleive it or not the 79 had a small computer, for what I dont know)

Hmm... This sounds alot like what I'm going through, except mine does it at idle regardless of how long it'* been running, It'* worse when it'* over 100* ambient, and Mine doesn't lope that badly, It'* from about 100rpm when ambient is cold to stalling constantly when ambient is hot. I'm suspecting a vacuum leak, I replaced a few hoses and it'* better now, It just need the last little bit.
