Temp update: Checked water temp using an OTC 2000 and found temp to run at abot 192 in city (stop and go) highest temp reached was 213 at an extended idle in park.

Question: The schrader valve on the fuel rail. Is it replaceble and if so will a regular tire valve stem work?

if your t stat doesn't open, you need to fix that asap! if your gauge is reading 125 after the car warms up.. then you have the same problem as me [working on the solution].

haha! Mine is the same way. There is something up with the sensor, or the wiring.. I haven't done a whole lot, except find the sensor.

tried replacing the thermostat yet? frankly, id rather see it running cool instead of hot. lol
