I was thinking of these guys to rivet/fasten in the steel grommets for the screws to pass through.

I'd say leave it on. If you decide to leave it off, how well does the touch up paint match? If it isn't bad, touch up the herpes.

well for the ride to work today I took off the bottom bumper cover, and I left the hood protector on. I think I will run it like that for a while, just so it covers up the large chip on the hood.

You need to adjust the gap between the hood and the nose.

I guess I am the only one but I say repaint. I enjoy my car too much too look at that all the time(not a fan of the bras either). I plan on repainting my front end for a much smaller blemish and a few other rock chips. I feel that paint quality is one of the most important parts of a car and its hard to compromise on it. Look at it this way, one repaint and with some regular care it will stay in great shape for a long long time. Your car is too nice for that IMO.
