I can really tell the difference just from the launch, how torquey the series ones are down low from your video.

Yup, actually the S1 is gigantically different compared to the S2, in terms of peak TQ and HP. For example a 91-93 L67 has a TQ rating of 260ft/lbs @ 2600rpms.

S1 91-93 develops less peak, but you get it way low down in comparison, so the S1 will beat the S2 off the line.

94/95 are very close in rating to the S2. But they get more low end, and less high end. Pretty much equal 1/4 miles from our experience to the S2. 94/95 gets to the 1/8 first, then the S2 starts catching up, and they finish nearly equal.
