Default toggle switch for fan

i am wondering on if i can a toggle switch built in my interior for the fan that cools the motor seeing as it always gets a little to hot for my liking i would like it to stay at 180-190 but here lately if i do "spirited driving" it gets a little to hot such as 215-230 (guessing)
but i just had a thermostate put in and i am wondering if i can run a switch to where i can turn the fan on and off manually from inside the car then that way it will run cooler

There are multiple topics on this now. I've done both of my cars, and helped John and Matt with theirs last summer.
