Default toggle switch for fan

i am wondering on if i can a toggle switch built in my interior for the fan that cools the motor seeing as it always gets a little to hot for my liking i would like it to stay at 180-190 but here lately if i do "spirited driving" it gets a little to hot such as 215-230 (guessing)
but i just had a thermostate put in and i am wondering if i can run a switch to where i can turn the fan on and off manually from inside the car then that way it will run cooler :?

i am thinking of sending that like and my car to my mechanic that i have to do a lot of my mods and hopefully he can do it i wonder how much it will cost me er uh sorry i aint that handy so i do the little things to "betsy" and he does the big things

oh uh "dummy" i should have specified 1993 oldsmobile delta 88 royal ls "betsy" (view sig)
i just dont like the temp getting that high espically when i need it to be duarable and reliable

arg my mechanic wont do the switch thing cause of insurance reasons
