Default Thermostat replacement

All right, I'm feeling daring. I want to replace my stock 195-degree thermostat with a 180-degree thermostat. Trouble is, I haven't got a clue what to do.

Firstly, how do you get that plastic cover off the engine?

Secondly, where is the thermostat?

Finally, how do you replace it?

After asking all these questions, I might as well just spray-paint "Sponsored by www.bonnevilleclub.com" on my bumper.
