Default Speed shut down eleminate? Hypertech?

I have a 2000 bonneville SLE and I notice when was flying down the highway that my car shuts off around 105. My 91 caprice use to do that so I bought a performance chip from hypertech. Can I get a performance chip?

but make sure you get speed rated tires before you start enjoying a speed limit free life - there'* a reason that your car was limited from the factory, and it'* related to your tires...

I'm not worried about the tires. Speed rating on tires are for sustained speeds for hours. I will also be going with some 20s with Z rated tires. How fast will my car go without the speed limmiter?
