Santana is one of my favorites for a nice night, sting, the police, maybe some John Mayer. Some softer incubus and 311 is always a good thing.
For relaxing music, i'm REALLY getting into female vocalists. Evanescance is one amazing group! Michelle branch, dido, blah blah.

Can't go wrong with Sinatra. Dido and Evanescence too! For a romantic night, Babyface and Boyz II Men (new stuff is great) hit the spot, and some 'stank love' with Outkast. :pimp:
Bernie Williams (yes, the baseball player!) has a great CD with some nice relaxing and romantic guitar tracks. Some other softer music that'* great is Andrea Bocelli, and Norah Jones.
