Dads 7up Pancakes
I usually just have a ****** breakfest during the week but on Sunday mornings I like to do something special.
I came across this recipe years ago and like the light fluffy air bubbles the 7up brings. Use room temp 7up but cold is ok too.
7-Up Pancakes
(6 servings)
1 egg
2 Tbsp. oil
2 cups pancake mix (any cheap stuf, add water type)
1 1/2 to 2 cups 7-Up
Beat egg and oil. Add pancake mix.
Add 1 cup 7-up. Stir until most lumps have disappeared. Gently stir in additional 7-up.
Bake on a greased, medium heat griddle, turning once.
