Okay listen up boys and girls, I have to world'* greatest beer batter recipe!!! It is so easy even Bill can do it!!!

I use halibut for this, because it deep fries the best, but you can use whatever fish you want.

Cut the fish into big chunks, like as big as your fist, make sure all the bones have been removed, I know there may be some bones that are leftover, no biggie.

Heat your oil, deep friers are the best, but a big pot of oil will be okay JUST BE CAREFUL!!!

One beer, I prefer Bud, but whatever beer you like the best is fine....one can, one bottle whatever. Add flour slowly until mixture is nice and smooth, not thick, and NO LUMPS...this is where your mixing skills come into play, add pepper and salt to taste, if you like lots add lots, if not so much then add what you like. Mix all together.

Dip fish into batter, and lift and drain allowing fish to have a nice coat of batter, just a light coating. Place (carefully) into hot oil and when fish floats to the top, it is done, place on rack covered with paper towel and enjoy!!!

Best served with a nice coleslaw, or my dad'* salad (that recipe at a later date), and home made fries......and of course your favourite BEER!!!!
