Default Engine Management programs?

Lets say you got a laptop compuiter, lets say you got a Nissan Skyline GT-R with a RB25DET engine, lets say you want to have almost complete control over the computer system, fuel curve, etc etc (engine managment)....IF you have all this, what would be recommended as a possible source to start looking for ways to tap into the car'* computer and what programs to use?

The OBD-II interface is standard but each manufacture has their own "special" codes and sometimes a differant communication standard to the obd-ii port.
