just wondering if there is way to show when i post...

if there was a way to pull all the information from my posts and drop them into an excel file.. and make a bar graph showing when i post most during the year, during the week, during the day.. highest posting day, most days with no posts.. etc..

It should be possible. I can extract that data by directly querying the database. If you can find a phpBB mod that shows it, I'll seriously consider implementing it.
