I am doing a restomod and using 2010 Camaro power mirrors and switch for this project. I have searched junkyarrds with no luck finding camaro'* local to rob plugs / harness etc.
Is there any sort of schematic out there so I can possibly make my own harness? And possibly any source for plugs like weatherpack, dorman etc?
I scoured around and the only info I could find was a GM to pontiac wiring conversion.

If you're going to build your own anyways, no need bothering with GM plugs. You can use spade connectors and wrap them up or whatever. As far as wiring diagrams, maybe someone else will chime in with one, but it would be worth probably $20.00 to get a manual off of Ebay to get a diagram, or the Autozone pay service.

If you are electronically inclined, you could disassemble enough to figure out what wire is ground, then experiment with the others to figure out what they do.
