2000 Monte Carlo SS Low Coolant Light
The low coolant stays lit on the dashboard and the level sensor and I've replaced the sensor 2 times, and made sure the antifreeze level is ok and the light stays on...... what is going on?
Could be wiring, like the plug or iffy part of wiring gets moved just right and "fixes" the issue, until it gets moved just right the other way.
Not knowing if you've checked all the related wiring I'll ask: Have you checked all the related wiring?

These sensors never last, They have always been a problem, Bet bet is to just unplug it, If it stays on then you have a chaffed wire somewhere, Its a pretty simple circuit , the bulb always has common power on the back of the cluster , then sends 12 volts to the yellow with a black stripe wire all the way out to the sensor and the sensor itself switches the ground though the black wire , so if you unplug it the circuit should be broken. and the light shouldn't have a path to ground and should no light. so just unplug it and open the hood and check fluids like a normal person. This **** was some of the dumbest **** ever and its just for lazy people. same with the low oil sensor .
