Welcome to the forums.
Do you have any OBD2 stored codes?- needs to be read by a good scanner.
What brand plugs/part number did you install ?
The OEM plugs from owners manual are AC-Type #41-921 -make sure they are gapped at .060 inch.

MAF? Do you have a simple vacuum pump/gauge? Scan tool?

Agree with the questions above ^^^^^^^

Also: 190,000 miles on original wires could definitely be related. I swapped mine out at around 130,000 .

Some other questions:

Is the [Check Engine] light on?

How many miles were on the old plugs when you swapped them?

How many miles have you owned the car?

Has this car had any trauma that you are aware of?

Does it accelerate the same from 0-15MPH if you start with "1" selected?

You may also have a bad coil (or two or three). Over the years, I've had similar symptoms on a couple of cars (one 3800 and two Northstar variants) that were instantly cured by replacing the coils.
