Why can't the RCA cables and the power cable be ran next to each other? Would this prevent the amp from turning on?

the amount of power going through there will give interference to the RCA and then the sounds is distorted

When you run your signal and power wires together you run the risk of getting interference in the incoming signal to the amp, which translates into a buzz or hum from the output (sub/speakers).

Basically take your subs, and wire it up to get the lowest resistance (ohms) your amp can handle....
