Maybe its too soon for anybody to know with the 2000+ cars, but anybody know around when I should expect to replace the cat and muffler on my 2000 Bonneville with 80,600ish miles on it?

The stainless content is extremely high and you probably won't need to consider it for some time. Most S2 folks haven't had to replace yet and that is 95/96

A well tuned car should never lose a cat. I've had cars past 200K miles w/factory cats.

There was nothing wrong with my factory cat at 140K when I replaced it and noticed no difference (with mods at the time).
