Would it cause problems to eliminate the catalytic converter
Regarding the issue of whether your Cat. Conv. is the cause of your pour running problems.
I experienced a plugged one many, many years ago. In that case, the car didn't run rough or miss, it just lacked power at higher RPM, imagine a smashed flat exhaust pipe. It first raised its ugly head at interstate speeds, even slowing on inclines.
The mechanic diagnosed it by timing about an 1/8 mile out back in a big parking lot first. Lucky thing is it had a bypass (drain) plug in the bottom. So he removed that and repeated the run, noting the difference. Yup, thermal meltdown of the Cat.
Maybe this info will help you troubleshoot your problem.
BTW, one of the guys here suggested I take the MAF out and spray clean the little wires. They sell a cleaner esp. for this sensor and recommend cleaning with every air cleaner change. MUCHO improvement!

Not only that, but a bad cat will rear it'* head (no pun intended...) when you can smell a rotten egg smell coming from your car, hear it rattle or see it glow red (its happened). Seeing that you're N/A, it'* least likely for you to have a bad cat, and it certainly does NOT cause misses. I'll bet all the money in my bank account ($ 0.50) that the plugs and wires will fix it... Get a Magnaflow high flow unit, replace and sell your orignal for scrap... you'll come out even or ahead. And you won't be contributing to emissions that way. Hi-flow, make money, keep emissions down... win-win-win situation.
And losing low-end power is not a myth on our engines. There are several here that removed their cats and gained nothing but the loss of power at the bottom end.

I think scrap metal places will buy cats. There was actually a news piece done in my state about cats being stolen from cars in mall parking lots. Its the same kind of people that steal the copper piping from foreclosed homes (that was in the news also.)
