What numbers is it reading?

40-50 psi at idle fully warmed up (maybe 50-60 on cold startup) is typical in my experience, and a slight increase (10-15 psi) on acceleration is normal since the oil pump is directly crankshaft driven.

If you are getting wild fluctuations, perhaps your oil pressure sender is going out.
