If you stick with the L36, you can use any from 95 to current. Some brackets and sensors will have to be retained from your original motor, but the motors themselves are the same.
If you go L67, that'* a whole new can of worms, but 97 and newer would be generally preferred.

If you get a low mileage unit make sure the upper intake is original and has not experienced a rupture around the EGR Stove Pipe area... Even a Motor with a replaced upper can still be good, But knowing how bad the failure was before it was caught and how long the car sat will be two major strike against that engine..
I got lucky with my 3rd L36... It was a Low mileage unit, from a 1996 Bonneville with a 11/95 Build.... It was low enough mileage and driven by an old lady iirc, that the Upper( I was able to inspect the upper ) was still in good shape and there were no signs of a leak at all..
Even the Mechanic who was swapping all of my parts over( I was way way out of town or I would have done it myself ) was pleased that he saw no evidence of leaks on all of the original upper and lower parts.. He felt good about those facts and felt the motor would be good..
So Far so good.. Almost 7000 Miles so far and its still purring along.. Better oil pressure than either of the other 2 motors as well....
You need to be really careful when searching for a used motor.. Even a series III L26 Longblock should work for you iirc as well... So there are choices out there for you..
The series II runs from 95-05 In the Bonnevilles...

Is there somewhere I can find a list of everything the L36 was in? Were they in lesabre'* and such as well during the same years?

95-05 Bonneville SE, SLE, SSE (non-Supercharged)
95-99 Olds 88, 98
95-05 Buicl Regal, Riviera, Park Ave, LeSabre Non-Supercharged
00-05 Impala LS
97-03 Grand Prix GT and some early SE'*
98-99 Monte Carlo Z34, Lumina LTZ and some police models
And from the sounds of it, you want to get the L36 motor and stick with it, so you can ignore the Supercharged references above (most people assume that when you say motor swap, you want to go to the supercharged one)
As a couple others mentioned, you can get a motor out of any of these years, the differences being you might have to swap some accessories and brackets onto yours. It would also be recommended that you replace the lower intake manifold (LIM) gaskets as well as the upper intake manifold (UIM) and gaskets to ensure that you don't run into the UIM failure right away.

I've decided to get a motor from LKQ.
It'* going to be coming out of a Non-supercharged 2000 LeSabre with 88k on the clock for $355. They're saying it ran good, tested good, and has 185psi across all 6. I plan on getting the new LIM gaskets from the Chevy dealer, and if I'm concerned at all about the UIM I'll replace it as well as the gaskets. I'm also going to put new gaskets everywhere else before dropping it into the car, I'm just basicly looking for one more confrimation that this motor will work. Now that you guys know what the motor I'll be using is coming out of, does anyone know for certain what I'll have to swap from my old motor to make it work?

That motor will work fine... You'll have to Swap the Bonneville parts to the motor but it will work...
