Installing new Dorman intake plenum on my K, have questions.
I'm not sure what I'm doing with some of this stuff. Specifically, the 2 small metal bits sitting next to the new plenum. I don't see any place on the intake or engine where they go. They look like some sort of stovepipe, but where do they go?
I can see that the thing on the AC Delco box is a PCV cover, but it doesn't match the one I have, so I don't use it. The spring in the bag goes with the different PCV cover too, right?
What it currently looks like. And before anyone says anything, yes, I will be pulling off the intake manifold and cleaning it it and replacing the gaskets with the uprated aluminum ones.

Those "bits" are two different diameter stovepipes for different years. Use the smaller one.
The one in your car is right in the middle of the lower intake sticking up about midline on the driver'* side. Pull it out with a pair of vise grips. I can see the old one sticking up in your pics.
The new one should be a light press fit. Put a deep-well socket of the appropriate size over it and tap it into place with a small brass or body hammer. You'll be able to tell by feel when it bottoms.

The pipe with the larger (3/4") base in your kit is meant to replace the stovepipe in the older 95-98 lower intake manifold. The smaller (5/8") base pipe is meant to replace the stovepipe in 99 and newer LIMs. These pipes increase the insulating space between the hot pipe and the unprotected plastic EGR bore in your new UIM from .015" in the older LIMs, and .065" in the newer LIMs to about .135" It is very important that you install a reduced diameter stovepipe to decrease the heat stress on the plastic EGR bore in the UIM.
It will be obvious which pipe fits your LIM. After you pull your old stovepipe out, clean out the bore in the LIM so that the new pipe goes in easily.
