Default Engine Temperature?

My engine runs at 180 degrees when I'm crusing down the road, but if I let it idle for a while, or while waiting in a drive thru, the temp rises to 220 degrees and then the fans kick in and it drops back to 180.

Is this normal?

It'* fairly normal. Mine does it, before and after a coolant flush

If you idle in one place for extended periods, turn your climate control to Auto (or turn the AC on). This will cause both radiator fans to come on high speed.
