Default 180 stat and fan speed

I have an Intense 180 stat that I drilled and plan on putting in when I do the LIM gaskets this spring. What I am a little confused about is the radiator fan kick-in temp. Am I correct in assuming it is set at 195 degrees now, and it should be changed to 180 when I put the 180 stat in? If so, what is the best way to do that? I think it is set in the PCM, correct? Can the PCM be flashed to change the speed? Thanks in advance.
