Bolt pattern will work but I am not sure about the offset.

As for tire size you can check out http://www.c5-corvette.com/tirecalc.htm. It will have you input you current tire size and will calculate every tire size from 12" to 22" you can also select how much height difference you want it to calculate for. To keep the speedometer and odometer accurate you will need to stay within 1/2"

I did a search with in .1 of an inch and this is what it came up with.

Tire Rim Width Height Height Difference
160/80 R 16 16" 6.30" (160mm) 26.08" (662.40mm) -0.03" (-0.70mm)
170/75 R 16 16" 6.69" (170mm) 26.04" (661.40mm) -0.07" (-1.70mm)
185/70 R 16 16" 7.28" (185mm) 26.20" (665.40mm) +0.09" (+2.30mm)
215/60 R 16 16" 8.46" (215mm) 26.16" (664.40mm) +0.05" (+1.30mm)
235/55 R 16 16" 9.25" (235mm) 26.18" (664.90mm) +0.07" (+1.80mm)
255/50 R 16 16" 10.04" (255mm) 26.04" (661.40mm) -0.07" (-1.70mm)
285/45 R 16 16" 11.22" (285mm) 26.10" (662.90mm) -0.01" (-0.20mm)
320/40 R 16 16" 12.60" (320mm) 26.08" (662.40mm) -0.03" (-0.70mm)

I think the 215, 235, or 255 would be the best since the stock tire on the wheel you are talking about is 225/60R16
