I would like to power three speakers off of one channel, and I'd like to do two speakers in parallel and those in series with the third speaker. Would I get 3 ohms out of this? Is that the best way to attach 3 speakers to one 2 or 4 ohm channel? The amp in question is a 4-ch Infinity with 110W RMS per channel.

Yep, all three probably even the same brand.

that works out to six ohms, if your amp is 1 ohm stable you can hook them in parallel thats 1.3 ohms

yup, wiring two in paralell will be 2 ohm, then add another 4 ohm speaker will bring it to 6 ohms

yes u will be at 4 ohms if wiring each pair in parallel, no such thing as to many speakers. as long as there is enough power going to each one, and the ohms match up. Technacaly u can run 100 subs off of one channel as long as the fina load is above the minimum impedancy the amp will run at.

looks like what ur gonna have to worry about is not enough power. remember everytime u double the amount of speakers, the power gets cut in half at the same impedance. so if the amp is 110rms@ 4 ohms and u have 2 speakers hooked up to the amp with a final load of 4 ohms, each speaker is only getting 50rms, 4 speakers= 25rms each, ect

Wiring two 4 ohm speakers in parallel and then in series to a third is akin to wiring two different speakers of different impedances together, which is a car audio cardinal sin! Please don't do that. You should never wire multiple drivers in series to each other, regardless of the impedance, the fact that you'd be wiring technically 2 drives together with 2 different impedance'* makes it even worse!
