Well I have a set of pacesetters coming soon and they are just the painted version however the paint will peal off the first time they are hot.
I have bad experience with the spray can versions of header coating as they flake off as well.
What should I be using?

FTW. I got some, but haven't pulled my EMs yet to coat them.

Use a coating (ceramic) instead.
