Default 95 Olds 88, stalling out, sputtering.

Yesterday, while I was driving home (~400km drive), my car started acting up. I was on the highway, doing 90-100 kmph, my car started to jerk, and when doing so, the check engine light was flickering. When it did jerk, the engine would rev up while decelerating. A couple of times, it actually did stall, and I had to pull over. This happened 4 or 5 times during the drive, and not at all during the last 100km or so.

Sorry if my description is hard to follow, I'm not too good with car problems.

Flashing check engine light is usually an indication that the engine is misfiring badly. Usually due to old wires/plugs etc.

How long has it been since your last tuneup?

And of course, we need you to have your car scanned for codes. Even bigger problem. You have a 95, OBD1.5 system. Only people that can scan them are dealers and maybe some national chain repair shops.

A flashing CEL is an indication of a misfire. Most likely plugs or wires. Since the CEL was lit there will be diagnostic trouble codes stored, and you should get the car scanned for trouble codes. Problem is, I think your car is OBD1.5 and it will be difficult to find someone with a scanner.

When were the plugs and plug wires last changed?

Two virtually identical responses at the exact same time. It worries me when I think like Mike.

That was a good one wasn't it? Very rare for something like that to happen.

I've owned the car for about a year, so I have no idea when the wires and plugs were changed. I'm terrible with knowing when to do what with car maintenance. Is there a list somewhere that shows me how often I need to take it in for certain things?

Back of the owners manual should have a list of periodic maintenance schedule.

Adam, if you are unsure on the maintenance history I would install new spark plugs and spark plug wires. Even if they are not your current problem, money spent on good basic maintenance is never wasted.

I agree with Roy, do a full tuneup. Plugs, wires, and grab a can of MAF sensor cleaner and hose out the MAF sensor.

Scotty Kilmer is a trip sometimes, but he has a good video on using the proper cleaner to clean a MAF sensor. Though his is different than yours, the concept is the same.
