Cooked up a pan of Eggplant, which is my FAVORITE dish to eat besides Lasagna.

Whats your favorite Dish???

I haven't had that in YEARS! Looks gooood.

It's hard to decide my favorite dish. I'm partial to my recipe for stuffed shells, and pasta primavera, only it's made with my own homemade alfredo sauce. I could eat that every day! :yum:

okay here it goes:

3 small to medium eggplants
4-5 eggs for the egg wash
Italian flavored bread crumbs
Freshly grated parmasean cheese
16oz shredded mozzarella cheese
2 jars or your favorite pasta sauce (This case, Franchesco Rinaldi)

In a medium bowl mix half bread crumbs and half of the grated parmesean cheese. you want a 50/50 mix

In a smaller bowl crack open the 4-5 eggs and beat

Heat the oil on med low to about 175-200 degrees

While the oil is heating, Remove the ends of the eggplant as well as the skin, and cut into thin slices.

Once the oil is heated up to temp, dip the eggplant slices into the egg and then into the breadcrumb mix then place into the oil

Note: Dont use the same hands for the egg and the bread crumbs. it will stick to your fingers and make a mess so use one hand for the egg, and the other for the bread crumbs.

Cook on each side about 3-5 minutes or until golden brown :twisted:

Remove the eggplant from the oil and place onto paper towels to remove excess oil

Once its all cooked, pre heat the oven to 375.

While thats heating, line the baking pan with a layer of sauce, then a layer of cooked eggplant, then a layer of small amounts of grated Mozzerella cheese. continue to layer in that order until you have gone through all of the eggplant. Save most of the mozzerella cheese for the top.

Once thats finished, place the pan into the over for 15-20 minutes until the cheese is melted and golden brown. let cool for a lil bit and serve....Mmmm mmm Mmmmm

No problemo!! It came out Awesome!! I had two big peices and after all was said and done, theres about half of pan left. :shock:

I dont think it will make it to Tuesday.


So, anyone else got some recipes or favorite dishes they like that are cooked at home?

Saturday, since The Missus was at her daughter's, I had an 8 piece original recipe KFC meall all to my lonesome.

We popped a turkey in the oven for yesterday (dunno why, just sounded good)

And I just now remembered, I forgot to bering the steak sammich I was supposed to have for luinch with me... :cry:
