Does this stock head unit by-chance have pre-outs that i could hook up for subs? and if i do replace the head unit will i be able to continue to use the steering wheel mounted controls?

There'* no preouts that could be used for amps or subs.
If you swap it out, you could use a PAC SWI or similar depending on the HU to retain the controls. Some stereo manufacturers have their own interface for retaining the factory wheel controls.

PAC SWI-X Steering Wheel Radio Control Interface at Crutchfield.com It allows you keep your steering wheel controls with certain aftermarket headunits. I left my stock headunit in and used this IPAC-OEM to hook up and control my ipod used a high/low converter RCA connections for my amps.

You can keep you bose HU and still use a sub and a amp. All you have to use is split the wire goign to the back speakers. have one to to the 6x9 and have one going to the amp. you still have to power and ground and remote so it will turn on. and the wires from the 6x9 will be used as the ac cables.

I hooked up an Alpine amp for 2 - 10" JLs, and an old school Earthquake 4 channel for some MTX 6x9s and MTX 5.25". I tapped into the factory Bose amp harness under the dash to feed my high/low converter that feeds a 7 band Clarion EQ, Audio Control Epicenter and then my bass amp, from the EQ I also sent the front & rear RCAs for my highs... from the EQ I can adjust my bass level, bass frequency, master volume, front & rear fade, & of course the 7 EQ bands. It even has an auxiliary input to hookup another music source. The EQ really makes the stock head unit sound good.
It sounds like a lot of equipment for a stock deck but I really want to keep my stock deck for the sake of not getting my car broken into. By looking through the window you can not tell that my car has any music in it.

You really don't have to tap into the dash harness to do that at all. Just install the subs and amp in the trunk, get your speaker input from tapping into the harness at each 6x9 to a high/low converter and run that to your amp input, output the amp to your subs and you are in business! I am not sure where your battery is on your car, on my 2000 it is under the rear seat which makes the amp install a cinch. If it is under the hood, just a little further to run and a little more work to conceal the wires to power the amp. Thats it.
