180 thermostat at 195
I have a 180 thermostat and often it it runs at the the stock 195 setting on the needle in the gauge.Do i have to reset something or should it just adjust in the computer for that without doing anything?

No, you don't have to reset anything. How long ago did you swap thermostats?

The gauge clusters are not perfect and only provide marginal info and not any great detail.

Is this temp when your driving, or parked with the engine running? Dropping to a 180* wont change when the fans turn on. Those don't turn on till higher temps.

I have a 180 Thermostat and my operating temperature is usually right around 185-190. I would assume that the thermostat is doing what it is supposed to, but like Dan said, the fans will still kick on at the normal temperature. I had to have my PCM programmed for 185F fan turn on. Otherwise even though the coolant is flowing, the fans wouldn't be cooling it off. The same would go if the fans did come on at 185, but the thermostat didn't let the coolant flow till it got hotter. Both are needed to cool the engine. Am I right guys?

Your car will run warmer than 180* unless you can tune your pcm to tell your fans to come on sooner. I have a 180* stat and it runs around the same temp as yours. I wouldn't worry
