Default Does it make sense to keep a parts car?

Are parts cars something that can generally be useful, or are they just kept because they have sentimental value to the owners? My luck sucks. Looking over my car, this winter'* salt was really the next-to-last nail in the coffin by my guess, and who knows what shape it'll be in when it needs to be inspected. Craigslist is rife with $500-1000 LeSabres, 88s, and Bonnevilles, so if I were to get a clean one of these, would it really make any kind of sense to keep my current Bonnie as a parts car? Everything works on it mechanically but I can't see the sense in parting out a car with such high miles. What would really be useful on it that it would be worth the trouble?
